Juan José is Full Professor of Physiology in the Department of Nutrition, Food Sciences and Gastronomy at the University of Barcelona. He has developed his teaching activity in the field of anatomy, physiology and pathophysiology of the Degrees of Pharmacy, Nutrition and Dietetics, Food Science and Technology and Culinary and Gastronomic Sciences, as well as various Masters in these fields. His research analyzes the role of polyunsaturated fatty acids and their metabolites (eicosanoids) in the development of the inflammatory process and the control of cell growth, as well as the modulation of these events by polyphenols.
