The Tomorrow Tastes Mediterranean Congress, organized by the Torribera Mediterranean Center (TMC), took place at the Faculty of Medicine and Health Sciences of the University of Barcelona. This is a key event to enhance the understanding and promotion of the Mediterranean Diet and its impact on health and gastronomy.
Our leader, Dr. Rosa M. Lamuela-Raventós, presented the UNIVO project, funded by the Ministry of Science, Innovation, and Universities, recently granted to our group. This project aims to study how different culinary techniques affect the quality of Olive Oil and Extra Virgin Olive Oil, and their potential health implications. Additionally, this project involves collaboration with institutions such as The Culinary Institute of America (CIA), the University of California-Davis (USDavis), the Institut de Recerca i Tecnologia Alimentàries (IRTA), and the Organización Interprofesional del Aceite de Oliva Español (OIAOE).
Dr. Maria Pérez Bosch participated in the workshop “Kitchen Strategy: Versatility of Extra Virgin Olive Oil as a Gastronomic Transformer.” This event highlighted the incredible potential of extra virgin olive oil to elevate culinary experiences through its stability, versatility, and health benefits.
