The event was organized by Javier Fernandez-Salvador Ph.D., Executive Director of the Olive Center at UC Davis, and featured contributions from Antonia Trichopoulou, Maria Loi, Jehangir Mehta, and Alexandra Kicenik Devarenne.

The session was chaired by Greg Drescher from The Culinary Institute of America (CIA).
