The Polyphenol Research group recently visited the IRTA-Mas Bové facilities in Constantí (Tarragona), a center with a 30-hectare estate mainly dedicated to the cultivation of olive trees and nuts. Among its facilities, there is a pilot plant for oil extraction and processing, as well as a laboratory specializing in quality assessment. It also features an experimental kitchen where various culinary tests are carried out with oils and other foods. During the visit, Agustí Romero Aroca presented the sensory analysis of extra virgin olive oil and olive tree agronomy, while Antonia Ninot Cort explained the genetics of the olive tree and IRTA’s actions to preserve the biodiversity of this crop. Additionally, Montserrat Jiménez Vives presented the experimental kitchen project with oils. This visit was highly interesting and contributed to strengthening the collaboration we have maintained for years.
