Its aim is to investigate how regular tomato consumption may influence brain and cognitive health through the microbiota\u2013gut\u2013brain axis.<\/p>\n<div>\n<p>To this end, a randomized crossover nutritional clinical trial was conducted in healthy adults aged 40 to 55 years. The study compared a period of daily consumption of tomato paste or concentrate with a control period based on a diet low in lycopene-rich foods, as lycopene is one of the main antioxidants found in tomatoes and watermelon. During the intervention, cognitive assessments, biomarker analyses, and functional magnetic resonance imaging (fMRI) studies were carried out to explore the potential mechanisms underlying the observed effects.<\/p>\n<\/div>\n<div>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-11552 aligncenter\" src=\"https:\/\/polyphenolresearch.com\/wp-content\/uploads\/2026\/07\/Esquema-MITOS-300x144.png\" alt=\"\" width=\"646\" height=\"310\" srcset=\"https:\/\/polyphenolresearch.com\/wp-content\/uploads\/2026\/07\/Esquema-MITOS-300x144.png 300w, https:\/\/polyphenolresearch.com\/wp-content\/uploads\/2026\/07\/Esquema-MITOS-1024x492.png 1024w, https:\/\/polyphenolresearch.com\/wp-content\/uploads\/2026\/07\/Esquema-MITOS-768x369.png 768w, https:\/\/polyphenolresearch.com\/wp-content\/uploads\/2026\/07\/Esquema-MITOS-1536x737.png 1536w, https:\/\/polyphenolresearch.com\/wp-content\/uploads\/2026\/07\/Esquema-MITOS-2048x983.png 2048w\" sizes=\"auto, (max-width: 646px) 100vw, 646px\" \/><\/p>\n<p>The first results of the project, published in the open-access journal <em>Antioxidants<\/em>, indicate that regular tomato consumption improves selective attention and associative memory. In addition, changes were observed in specific functional brain networks, as well as in biomarkers related to neuronal plasticity, such as brain-derived neurotrophic factor (BDNF).
