Entre les seves instal\u00b7lacions hi ha una planta pilot per a l\u2019extracci\u00f3 i processament d\u2019olis, aix\u00ed com un laboratori especialitzat en l\u2019avaluaci\u00f3 de la seva qualitat. Tamb\u00e9 compta amb una cuina experimental on es duen a terme diverses proves culin\u00e0ries amb olis i altres aliments. Durant la visita, Agust\u00ed Romero Aroca va presentar l\u2019an\u00e0lisi sensorial de l\u2019oli d\u2019oliva verge extra i l\u2019agronomia de l\u2019olivera, mentre que Antonia Ninot Cort va explicar la gen\u00e8tica de l\u2019olivera i les accions de l\u2019IRTA per mantenir la biodiversitat d\u2019aquest cultiu. A m\u00e9s, Montserrat Jim\u00e9nez Vives va presentar el projecte de cuina experimental amb olis.
